Pomegranate, carrot and cabbage salad (Serves 3 – 4)

Ingredients

  • 2 cups pomegranate
  • 1 cup grated carrot
  • 1 cup grated cabbage
  • 2 tablespoons finely chopped spring onion
  • Salt to taste
  • Lemon juice
  • 5 –6 finely chopped dates
  • Finely chopped Ginger (optional) a small quantity
  • 2 teaspoons grated coconut (optional)

Method

Mix the all the above ingredients

Cucumber salad (Serves 2)

Ingredients

  • 2 Cucumbers (chopped)
  • Grated coconut (1 teaspoon)
  • 5-6 coarsely ground peanuts
  • ½ teaspoon limejuice
  • Powdered sugar (a pinch)
  • Mustard powder (a pinch)
  • Salt to taste

Method

Mix the all the above ingredients

Lettuce and sprouts salad (Serves 4)

Ingredients

  • 1 cup Ice burg lettuce (soaked in cold water and torn into big pieces)
  • 1 Spring onion (finely chopped)
  • ½ Cucumber – (sliced)
  • 1 cup Mixed steamed sprouts (mung/ chick peas/ red beans)
  • 1 tomato (cut into big pieces)
  • 1 clove garlic (crushed) and soaked in lemon juice
  • Pepper
  • Salt to taste

Method

Mix the all the above ingredients 

Date & pineapple salad (with orange dressing Serves 6)

Ingredients

  • 1 fresh pineapple cut into small pieces
  • ¼ cup dates sliced
For dressing

  • 1 cup orange juice 1-teaspoon honey
  • ½ teaspoon lemon juice (optional)

Method

Mix pineapple and dates. Toss in the dressing.
